Some of my faves!

Having travelled around the world and having worked in different restaurants, I've been fortunate enough to gather inspiration from a great many sources. One day you may want to eat Mexican burritos, and another a 6 hour Italian pasta feast! Or maybe you're training for a triathlon & have to follow a special diet. With all my International food knowledge, & focus on healthy, whole foods, I promise to create your ideal meal experience!

Kale salad with sesame-ginger miso dressing

Torn pieces of green kale, stem removed

½ fresh mango, diced

1 avocado diced

1/8 cup thinly sliced red onion

¼ cup steamed brown rice

¼ cup roasted walnuts

2 tbsp roasted sesame seeds

1 tbsp dried unsweetened cranberries

Dressing

¼ cup rice vinegar

¼ cup olive oil

2 tbsp toasted sesame oil

1 tbsp honey or cane sugar

1 tbsp white miso

1 tbsp soy

1 tbsp toasted sesame seeds

1 inch piece of ginger, minced

1 large garlic clove, minced

Blend everything until creamy. Toss with salad

Grilled lamb tenderloin, green oil & shaved fennel salad

2 lbs lamb tenderloin

Sea salt & coarse black pepper

Olive oil

Grill lamb until medium rare, let stand under foil until ready to serve.

Shaved fennel salad

2 bulbs fennel, sliced thinly on mandoline

1 green zucchini, sliced thinly on mandolin

¼ cup Picked parsley, dill & fennel fronds, washed & dried

Olive oil

Fresh Lemon juice

Fresh Orange juice

Green oil

50g washed & picked dill

50g washed & picked parsley

200g olive oil

Blanch herbs 30 seconds, drain & dry on paper towels

Chop herbs

Blend with olive oil 45 seconds

Cool over ice bath

Thai “Nam Tok” lettuce wraps

1 cup fresh deveined white shrimp, poached & diced

2 tbsp torn mint leaves

Fresh lime juice

Fish sauce

Cane sugar

Roasted rice

Sliced red onion

Boston lettuce leaves
